Foley is a production of sound effects (in a studio) that are added to a film or video in post-production to make it more realistic. This can be any sound from objects falling, fight scenes, running etc. You mostly want to record these sounds in mono to get a direct sound. If you record in stereo, you might pick up some sounds you don't want.

Foley is very fascinating on how they use different items and surfaces to create different sounds. I also think its a unique skill that has to be learnt by experimenting with different sounds. The foley sounds in this video don't seem to be manipulated in an editing software, I presume there is a sound mixer who mixes the levels to create the right sound.
